Southern Green Beans Ingredients

  • Bacon: I use nitrite and nitrate-free bacon. It’s a little more expensive but I think it’s worth it for the health benefits.
  • Green Beans: This recipe is best made with fresh green beans. Trim them and cut in half or in thirds depending on the length of the beans.
  • Chicken Broth: I like to use low-sodium broth so I can control the salt in the overall dish.
  • Salt + Black Pepper: The perfect simple seasoning to finish off these beans!

Tips

  • Dry: After rinsing the beans, it’s VERY important to dry them! When you add the beans to the hot bacon grease, you risk reactions like this one if you have excess water. Avoid the danger by drying your beans with a clean kitchen towel! Please!!
  • Onion:Try this recipe with a bit of onion! Chop up 1/2 cup of yellow onion and sauté it in the bacon drippings for about 5 minutes, with the heat on medium-low, before adding the green beans.
  • Fresh is Best: Use fresh green beans! You know that I love using convenience foods when the time is right, but this is NOT one of those times. You need the structural integrity of fresh beans to stand up to the long cooking time. Frozen or canned beans would just disintegrate!

Tools You’ll Need

The tools to make this country style green beans recipe are very straightforward:

  • A colander, for draining your beans.
  • A clean kitchen towel.
  • A large pan.
  • A spoon.

Storing + Freezing +Make-Ahead

  • How Long Can You Keep This In The Fridge? These Southern style green beans with bacon will last in the fridge for 4 days.
  • Can You Freeze This? Yes! This makes a great freezer meal to have on hand when you need a quick, delicious side dish. Portion out your green beans and store them in the freezer for up to 2 months. The lack of dairy or other more perishable ingredients gives these southern green beans a long shelf life.
    • To thaw, simply pop your containers in the microwave and hit the “thaw” setting!
  • Make-Ahead Tips: Since these beans have to simmer for at least an hour, they come with make-ahead built right in! Just start these beans an hour before you need them, and they’ll be ready and waiting for you. Or you can always make them ahead of time and store them overnight! Just reheat and serve.
  • Food Safety: If you’d like more info on food safety check out this link.

I’m in my 70’s and have cooked green beans this way since I learned how watching my mother when I was about 6 years old sitting on the counter while she cooked. She learned as a young girl from her mother as well. Bacon and onion have always been part of how they been cooked. I’ve also added mushrooms on occasion for a bit of a different taste. Not always, just occasionally. BTW, not that it matters, I’m a male person. Thanks Kathleen for putting your recipe out there. It’s definitely a good one to have. Simple and delicious.

FAQs

How to make Paula Deen green beans? ›

Add green beans to pan and sauté over medium heat for 2 minutes, stirring frequently. Add boiling water to pan and cover. Cook for about 15 minutes, just until beans are tender. Add vinegar, butter and salt and pepper and stir.

How to infuse flavor into green beans? ›

You can saute them in some fresh herbs, warm them in a bit of vegetable or chicken stock and a squeeze of lemon juice, add some crispy lardons of bacon or some caramelized onions. There are lots of possibilities. Do taste them before adding salt, as most canned vegetables already have too much salt added.

How long to soak green beans before cooking? ›

The correct way to cook green beans with soaking method is to soak them in water overnight or at least 3 to 4 hours before cooking. Long soaking time helps to soften the green beans and thus, reduces the cooking time and saves gas.

What is Paula Deen seasoning? ›

The ingredients listed in order are: "sea salt, granulated garlic, black pepper, granulated onion, ground cumin, and other spices". I have used the recipe listed on this site and included equal amounts of garlic powder and onion powder.

What makes green beans taste better? ›

A little butter, minced garlic, and lemon-pepper seasoning are all you need to bring the best out of fresh green beans.

Why add baking soda to water when cooking green beans? ›

Your Beans Will Cook Faster

Well, creating an alkaline (or basic) environment by adding a small amount (about 1 teaspoon per cup of dry beans) of baking soda to your soaking/cooking water can actually help your beans cook faster.

How do you cook Jamie Oliver green beans? ›

Put a pan of salted water on to boil. Meanwhile, trim the the beans. Once the water is boiling, steam or boil the beans until tender. Drain well, then tip the cooked beans into the bowl with your dressing and toss everything together, making sure all the beans get coated.

How to make beans taste homemade? ›

Toss drained/rinsed/dried beans with a bit of olive oil (or avocado oil) and your favorite seasonings. You can add crushed whole seeds (coriander, cumin, fennel, mustard, etc.), woodsy herbs (thyme, oregano, rosemary, sage), red pepper flakes, crushed garlic cloves, and of course salt and pepper.

What can I add to beans for flavor? ›

As for herbs, woody types like thyme, sage, and rosemary, are also great — add those in with the beans and water. I always add bay leaves at this stage, too, since they bring that herbaceous can't-put-your-finger-on-it flavor.

What is the season for green beans? ›

Green beans are available all year round, though you can find them fresh at most local farmers' markets from around May to October. A cup of raw green beans contains 34 calories, 2 grams of sugar and is full of fiber (15% of your daily needs).

What happens if you don't soak beans before cooking? ›

Modern cooking websites often say it doesn't matter. In a way, they're both right. Soaking beans can help improve the texture of the final product once the beans are cooked and reduce the gas produced when the food is being digested. But it isn't necessary to soak them.

Do you season green beans before or after cooking? ›

After the green beans are boiled, remove them from the pot and strain them through a colander and then immediately pour them into your buttered pan. Season the green beans with salt and pepper.

Do you salt water when cooking green beans? ›

Using a high concentration of salt in the blanching water (2 tablespoons per quart of water) allows the green beans to tenderize rapidly, so their bright green color is preserved. The large amount of salt in the blanching water penetrates the beans' sturdy skins to season them more fully than smaller amounts would.

Should green beans be cooked covered or uncovered? ›

Add the water and immediately cover. Cook covered until the beans are bright green and crisp-tender, 1 to 2 minutes. Serve. Add the red pepper flakes, if using, and serve immediately.

How to spice up cooked green beans? ›

Then, I toss the blanched beans with olive oil, lemon juice and zest, garlic, and salt to pep up their flavor. Serve them just like that, or dress them up more with toasted almonds or pine nuts, grated Parmesan cheese, red pepper flakes, or fresh herbs like basil, parsley, or thyme.
