Kourtney Kardashian shares recipe for keto-friendly PIZZA (2024)

Kourtney Kardashian went on the keto diet for the second time this summer, and is now sharing her favorite healthy recipes with followers.

The 40-year-old's latest go-to food, which she promoted on Instagram, is a cauliflower pizza crust, which she says is a low-carb, healthy alternative to traditional pies.

According to her website, Poosh, the 'deliciously healthy' dish 'makes for a tasty midday snack, lunch, or dinner meal.'

The 'Gluten-free, carb-free, keto cauliflower pizza crust' from Poosh's recipe developer Chef Sara takes 40 to 45 minutes to make.

The crust is made from grated cauliflower, cauliflower rice, Parmesan cheese, an egg, and spices.

On top, she puts three kinds of cheese, basil, pepper, and olive oil — but no sauce. However, Chef Sara says home cooks can feel free to add whatever sauce they like.

The recipe is just the latest in a list of keto-friendly foods Kourtney has promoted, which have also included a low-carb cheesecake, gluten-free meatballs, and 'Coconut Butter Keto Cups'.

Kourtney got back on the keto diet in time for summer, explaining on her site: 'We wait all year for summer, and when it finally rolls around, I want to look and feel my best.'

'My body never looked better than when I did the keto diet two and half years ago, when I did it for two months,' she said.

'In my experience, I’ve found the best method to train my body to curb sugar cravings, burn fat, and kick-start weight loss is by sticking to a keto diet.

She said that for a month, she was committing herself to a meal plan that 'is all about eating high-fat, high-protein, and low-carb'.

Kourtney also explained that her doctor had been the one to put her on the diet the first time, a couple of years ago.

'He tested my muscles and found that I had high levels of mercury and lead in my system,' she said.

'He let me know that one of the fastest ways to detox was to keep my body in a state of ketosis. I would check my blood sugar and ketone levels every morning to make sure I was on track.

'I had a really positive experience the last time around and wanted to restart my routine this summer. It’s definitely a more restrictive eating plan, but I found that once I knew the ground rules, I was very strict and really stuck to it.'

She's eating minimal carbs, and no grains, beans, or legumes. She's avoiding processed and sugary foods, including fruits, as well as many condiments and root vegetables like potatoes.

'Starting keto isn’t the hard part. I’m usually excited and generally looking forward to the way I feel on it,' she said.'Staying with it is the hard part.

'It’s not even about willpower as much as it is convenience. Running around with my kids, attending events and meetings, and keeping myself fueled for my busy schedule is the real challenge. '

It's not just about a hyper-restrictive diet either. Kourtney also tests her blood every morning to check her blood sugar and make sure she's in ketosis.

When a body is in ketosis, it's not getting enough glucose to burn for energy, so it turns to burning fat instead.

Because of this, it can allow people to lose weight quickly — and it's also made it a target for critics, who argue that ketosis is dangerous. It can have side effects like fatigue, digestion issues, nausea, sore muscles, and bad breath.

But proponents like Kourtney say it's a great way to lose weight.

Kourtney has also teamed it with intermittent fasting, restricting her eating times to between 11 am and 7 pm.

'Lastly, eating late is not an ideal keto practice. I try to be done eating four hours before I go to sleep,' she explained.

As for what she eats in a typical day, the reality star has generously shared her food diary.

For breakfast, she likes anavocado smoothie with a couple drops of Stevia, MCT oil, bone broth powder, and blue-green algae mixed in.

For lunch, her go-to is 'usually a protein-based chef salad with turkey, a base of mixed greens, and egg whites.'

Dinner might be chicken or salmon with cauliflower rice or broccoli rice.

'At nighttime, I’ve been eating one collagen protein ball as an after-dinner treat,' she added.

Poosh's 'gluten-free, carb-freeketo cauliflower pizza crust recipe'

Pizza crust ingredients:

For pizza crust:

2 cups grated cauliflower or cauliflower rice

2 cups grated Parmesan

1 egg

1 teaspoon garlic powder

1 teaspoon turmeric

Pinch of salt

Pizza topping ingredients:

1 cup shredded mozzarella cheese

1 cup shredded mixed cheddar and Colby cheese

1/2 cup julienned basil

1 cup fresh baby mozzarella (or sliced fresh mozzarella)

A few fresh whole basil leaves for garnish

Olive oil for drizzle

Fresh cracked pepper

Instructions:

1. Preheat the oven to 400° F.

2. Sauté cauliflower rice orgrated cauliflower in a pan on medium-low heat for 5 to 10 minutes. Include pinch of salt to evaporate extra moisture.

3. Put cauliflower into a bowl. Add the grated Parmesan cheese, egg, garlic powder, and turmeric and mix well.

4. Form cauliflower dough into desired crust shape, pressing firmly. Make sure cauliflower is packed tight for desired pizza crust thinness. Bake at 400° F for about 20 minutes.

5. Remove crust from the oven, add the shredded cheeses and julienned basil, and place in the oven for 5 to 7 minutes, until the cheese is melted.

6. Remove from oven, add the fresh baby mozzarella balls or sliced fresh mozzarella, and place in the oven for the last time for 3 to 5 minutes.

7. Remove from the oven and add the whole basil leaves, light drizzle of olive oil, and fresh cracked pepper. Serve and enjoy.
